Red Beer Soup with Spicey Cabbage Kraut


Directions - soup

  1. Render bacon slowly.
  2. Just before bacon begins to crisp, add onions and cook slowly until they soften and begin to caramelize.
  3. Add garlic and jalapeños.
  4. Cook until soft and then add honey and cook until toasty color and carefully add beer.
  5. Allow to reduce by half.
  6. Add chicken stocks. Season with salt and pepper.
  7. Allow to cook 30 minutes.
  8. Strain.

    Assemble and allow to rot in fridge for 2 days.
